New Special: Tri Tip Pastrami!
When creating new menu items, I am guided by Urbane Cafe’s simple food philosophy: create healthy but satisfying and delicious food that guests crave and want to eat every day. With this in mind, I have often shied away from dishes that are overly hearty or indulgent, like the classic Pastrami sandwich. But that all changed when I tasted a sample of this new Pastrami Tri Tip.
Traditionally, Pastrami is made by curing brisket in a seasoned salt and sugar brine for at least 5 days and then smoking it for that ubiquitous, smokey, salty, fatty and rich meat. It is a diner favorite, often served with a mustard or Russian dressing, pickles and a Swiss cheese. While undeniably delicious, I often found myself feeling too full and sluggish after indulging in a Pastrami sandwich.
However, new possibilities opened up to me when I sampled our Pastrami Tri Tip. By using Tri Tip, which is one of the leanest yet high quality cuts of steak available, instead of the usual brisket, it became clear that we could create a sandwich that was every bit as savory and rich, minus the overly heavy and full feeling that often follows. The magic lies in the balance.
Our Pastrami Tri Tip, perfectly paired with sweet and tart Bread and Butter Pickles, a tangy Swiss Cheese from Tillamook Farms, our garlic-spiced Remoulade, a creamy and crunchy Apple Slaw, and our signature Golden Mustard, is our Urbane Cafe twist on the classic. It retains the timeless flavors while offering a healthier, lighter alternative. As Fall approaches, we are thrilled to introduce our Pastrami Tri Tip Sandwich – something warm, savory and delicious that we hope you and our guests can be just as excited about as we are!
